Family German Chocolate Cake

Decadent, deeply chocolatey, and layered with a luscious coconut-pecan frosting, this German Chocolate Cake is a timeless favorite. With its moist crumb and rich flavor, it’s perfect for celebrations or anytime you want to impress with a classic dessert.

Ingredients

For the Chocolate Cake

Ingredient

All-purpose flour: 2 cups
Granulated sugar: 2 cups
Unsweetened cocoa powder: ¾ cup
Baking soda: 2 tsp
Baking powder: 1 tsp
Salt: ½ tsp
Buttermilk: 1 cup
Vegetable oil: ½ cup
Large eggs: 2
Vanilla extract: 2 tsp
Hot water or coffee: 1 cup

For the Coconut-Pecan Frosting

Ingredient
Evaporated milk?: 1 cup
Granulated sugar: 1 cup
Egg yolks (large): 3
Unsalted butter: ½ cup
Vanilla extract: 1 tsp
Sweetened shredded coconut: 1½ cups
Chopped pecans: 1 cup

Directions
1. Bake the Cake Layers
Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
Mix Dry Ingredients: In a large bowl, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt.

Add Wet Ingredients: Stir in buttermilk, oil, eggs, and vanilla extract. Mix until fully combined and smooth.

Add Hot Liquid: Slowly pour in the hot water (or hot coffee), mixing gently. The batter will be thin—that’s expected.

Divide & Bake: Pour the batter evenly into the pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Cool Completely: Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool fully.

2. Make the Coconut-Pecan Frosting

Create the Custard Base: In a medium saucepan, whisk together evaporated milk, sugar, egg yolks, and butter over medium heat.

Thicken: Stir constantly for 10–12 minutes until the mixture thickens and coats the back of a spoon.

Finish the Frosting: Remove from heat. Mix in vanilla, shredded coconut, and chopped pecans. Let cool to room temperature—it will thicken more as it sits.

3. Assemble the Cake

First Layer: Set the first cake layer on a serving platter. Spread one-third of the frosting evenly across the top.

Stack and Repeat: Add the second layer and another third of the frosting. Top with the final cake layer and finish with the remaining frosting.

Optional Decoration: Traditionally, the sides are left bare to showcase the cake layers, but feel free to frost the sides or drizzle with ganache for a richer finish.

My Polish aunt taught me this and it’s been a household fave since!

These Polish Stuffed Cabbage Rolls are a classic comfort food that’s rich in tradition and flavor. Tender cabbage leaves are filled with a hearty mixture of seasoned ground beef, ground pork, and rice, then rolled up and baked in a tangy tomato sauce. This timeless dish is perfect for a special family meal and a taste of authentic Polish cuisine.

Ingredients:

Large head of cabbage: 1
Ground beef: 1 pound
Ground pork: ½ pound
Cooked rice: 1 cup
Large onion, finely chopped: 1
Garlic, minced: 2 cloves
Egg: 1
Salt: 1 teaspoon
Black pepper: ½ teaspoon
Tomato sauce, divided: 2 cups
Beef broth: 1 cup
Sugar: 1 tablespoon
Lemon juice: 1 tablespoon
Fresh dill, chopped:1 tablespoon (optional)

How To Make Polish Stuffed Cabbage Rolls:

Step 1: Prep Cabbage: Preheat your oven to 350°F (175°C). Bring a large pot of water to a boil and carefully place the whole cabbage in the pot. Boil for about 10 minutes until the outer leaves are tender enough to peel away. Remove the cabbage and let it cool. Carefully separate the leaves.

Step 2: Make the Filling: In a large mixing bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, egg, salt, and black pepper. Mix until well combined.

Step 3: Roll the Cabbage: Take a cabbage leaf and place about ¼ cup of the meat mixture in the center. Fold the sides of the leaf over the filling and roll it up from the bottom. Repeat with the remaining leaves and filling.

Step 4: Prepare the Sauce & Bake: In a large baking dish, pour a bit of tomato sauce on the bottom. Arrange the cabbage rolls seam-side down in the dish. In a separate bowl, mix together the remaining tomato sauce, beef broth, sugar, and lemon juice. Pour this sauce over the rolls. Cover the dish with aluminum foil and bake for 1.5 to 2 hours, or until the cabbage is tender and the meat is cooked through.

Step 5: Garnish & Serve: Sprinkle with fresh dill before serving, if using.

Crispy Bacon Like Never Before

The Bacon Hack That Changes Everything

Say goodbye to greasy stovetops and limp, uneven strips—this clever pantry trick delivers perfectly crispy bacon with minimal mess and zero fuss. Whether you’re prepping brunch for a crowd or just craving a better breakfast, this method guarantees golden, crunchy results every time.

Let’s walk through two foolproof ways to elevate your bacon game—no flipping, no splattering, just delicious simplicity.

Why This Method Works

Crispy Every Time: No soggy centers or burnt edges—just evenly cooked perfection.
Mess-Free: Skip the splatter and simplify cleanup.
Effortless: Set it, forget it, and let the magic happen.
Endlessly Useful: Add crispy bacon to sandwiches, salads, soups, casseroles—or enjoy it solo.

What You’ll Need (Serves 4–6)

1 lb thick-cut bacon (or regular, if preferred)

Optional:

  • Wire rack + baking sheet (for oven method)
  • Aluminum foil + paper towels (for microwave method)

Method 1: Oven-Baked Bacon (The Classic)

1. Preheat

  • Set your oven to 400°F (200°C).
  • Line a baking sheet with foil for easy cleanup.
  • Place a wire rack on top to elevate the bacon and let fat drip away.

2. Arrange

  • Lay bacon strips side by side on the rack—no overlapping.
  • Leave space between strips for even cooking.

3. Bake

  • Bake for 15–20 minutes, depending on thickness and desired crispiness.
  • Watch closely during the last few minutes to avoid burning.

4. Cool & Serve

  • Transfer bacon to a paper towel-lined plate to drain.
  • Serve hot with eggs, pancakes, avocado toast—or enjoy on its own.

Method 2: Microwave Bacon (The Quick Fix)

1. Prep

  • Line a microwave-safe plate with 2–3 layers of paper towels.
  • Place bacon strips side by side, not touching.

2. Cover & Cook

  • Add another layer of paper towels on top.
  • Microwave on high for 3–5 minutes, checking every minute.
  • Time may vary based on microwave wattage and bacon thickness.

3. Cool & Serve

  • Carefully remove and transfer to a fresh paper towel-lined plate.
  • Enjoy crispy bacon in minutes—no pan required.

Pro Tips for Bacon Bliss

  • Thick-Cut Wins: Holds up better and delivers extra crunch.
  • Watch the Clock: Thinner bacon cooks faster—keep an eye out.
  • Save the Drippings: Bacon grease adds flavor to veggies, potatoes, and more.
  • Store Smart: Keep leftovers in an airtight container for up to 5 days. Reheat in the oven or toaster oven for best results.
